Not only is pressure canning easy, but it's also the only safe method recommended by the USDA for low-acidic foods such as vegetables, meats, and fish. With this full-service canner, you can do it all. It doubles as a boiling water canner for preserving fruits, jams, jellies, pickles, and salsa in half-pint, pint, and quart jars. It can be used on both gas and electric smooth-top ranges. The easy-to-read gauge automatically registers a complete range of processing pressures, which is especially helpful if you live in a high-altitude area. You can start canning worry-free with the special air vent/cover lock. This allows pressure to build only when the cover is closed properly and prevents the cover from being opened until pressure is safely reduced. It also gives a visual indication of pressure inside the canner, so you always know what's going on. Not only is this pressure canner versatile, it's durable too. It's made of heavy-gauge aluminum for long life and fast, even heating. It comes with a cooking/canning rack and an 80-page easy-to-follow instruction/recipe book for canning and pressure cooking.
